The Ogliastra pistoccu, the bread of the land of centenarians

Known for aspects linked to genetic and natural peculiarities, Ogliastra has a little gastronomic secret, su pistoccu.

 

Ogliastra, once the most difficult area of Sardinia to reach, is experiencing a period of great fame. Despite having originally acquired international fame as the land of centenarians, this area blessed by nature with wonderful beaches and extraordinary archaeological remains such as its Giants’ Tombs gives us many reasons to know it better.

In fact, for the Sardinians, Ogliastra is first and foremost a particular bread that is not yet really known outside the island: su pistoccu.

It is a type of crunchy bread, thin (but not like carasau) and rectangular in shape, made with durum wheat flour, water, yeast and salt. Its main characteristic is its long life, which derives from the drying process to which it is subjected.

How is pistoccu from Ogliastra made?

 

The production process of Pistoccu Ogliastrino involves the formation of a thin pasta base, which is then cooked in the oven. After cooking, the bread is cut into narrow strips and left to dry. This process helps ensure the long shelf life of the bread, making it ideal for storing for long periods. In short, it was ideal to be carried in the pinnetta, the traditional shepherds’ refuge, and consumed over the course of weeks and in various ways.

It can be eaten dry, but is often softened instead, typically by quickly soaking it under running water. It can be served with a variety of seasonings, such as tomato, olive oil, salt, and flavorings such as rosemary or oregano.

This type of bread is particularly appreciated for its versatility and its preservation capacity, making it an important component of the culinary tradition of Ogliastra and unique in Sardinian cuisine.

The name “Pistoccu” may derive from the Sardinian word “pistoccu” or “pistoccu de arròba,” meaning to dry or dry, referring to the method of making bread.
